Indian Cuisine during the reign of the Aryans concentrated mainly on the finer aspects of food. The main thrust was on development of mind, body and spirit with the use of such food. The food-culture however went through various changes and evolutions since India never remained under one rule for ever and with the change of rulers, the culture and food practices also changed considerably.  

For the first time hot pot cooking now so common in preparation of India Recipes were introduced when the Mongolians invaded India and ruled it. Subsequent influences on the food preparation and recipes in India also were noticed at the time of the Persians who established the Mughal Rule in India. The Indian society also experienced the influence of Turks and Greeks before them. 

Most of the non-vegetarian recipes like the Indian Chicken Recipes were developed during these periods and later they were further modified with the Chinese influences. However, the evolution of Indian foods during these days were mainly a migration from vegetarian to non- vegetarian predominance

Finally, when India came under the Western domination, like the Indian culture, the food culture also adopted various recipes from Portuguese, French and British food preparations. Indian Food thus comprises of Portuguese Vindaloo, Chinese chow chow and noodles, and British ketchup and tea.
